Chicken in Tomato Sauce with Vegetables

Ingredients:

  • 1 chicken (cut into pieces)
  • 4 ripe tomatoes (or 400 g of canned diced tomatoes)
  • 2 tablespoons of tomato paste
  • 2 onions (chopped)
  • 3 garlic cloves (minced)
  • 2 carrots (sliced into rounds)
  • 2 potatoes (cut into chunks)
  • 1 red bell pepper (cut into strips)
  • 1 celery stalk (sliced)
  • 1 bouquet garni (thyme, bay leaf, parsley)
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin (optional)
  • Salt and pepper (to taste)
  • 3 tablespoons of olive oil
  • 500 ml chicken stock (or water)

Preparation:

  1. Prepare the Chicken:
    • Clean the chicken and cut it into pieces if not already done.
    • Heat the olive oil in a large pot. Sear the chicken pieces until golden brown. Remove and set aside.
  2. Prepare the Aromatic Base:
    • In the same pot, sauté the chopped onions until translucent.
    • Add the garlic, paprika, and cumin. Stir well to release the aromas.
  3. Add the Vegetables and Tomato Sauce:
    • Stir in the diced tomatoes, tomato paste, carrots, potatoes, bell pepper, and celery.
    • Mix and let simmer for 5 minutes.
  4. Cook:
    • Place the chicken pieces back into the pot. Add the bouquet garni, chicken stock, salt, and pepper.
    • Cover and simmer over low heat for about 1 hour and 30 minutes, until the chicken is tender and infused with flavors. Add water or stock if the sauce reduces too much.
  5. Finishing Touches:
    • Adjust the seasoning if necessary. Remove the bouquet garni before serving.

Serving:

Serve the chicken in tomato sauce hot, with rice, fresh pasta, or bread to soak up the flavorful sauce.
