Ingredients:
- 1 chicken (cut into pieces)
- 4 ripe tomatoes (or 400 g of canned diced tomatoes)
- 2 tablespoons of tomato paste
- 2 onions (chopped)
- 3 garlic cloves (minced)
- 2 carrots (sliced into rounds)
- 2 potatoes (cut into chunks)
- 1 red bell pepper (cut into strips)
- 1 celery stalk (sliced)
- 1 bouquet garni (thyme, bay leaf, parsley)
- 1 teaspoon of paprika
- 1 teaspoon of cumin (optional)
- Salt and pepper (to taste)
- 3 tablespoons of olive oil
- 500 ml chicken stock (or water)
Preparation:
- Prepare the Chicken:
- Clean the chicken and cut it into pieces if not already done.
- Heat the olive oil in a large pot. Sear the chicken pieces until golden brown. Remove and set aside.
- Prepare the Aromatic Base:
- In the same pot, sauté the chopped onions until translucent.
- Add the garlic, paprika, and cumin. Stir well to release the aromas.

- Adjust the seasoning if necessary. Remove the bouquet garni before serving.
