Irish Coffee Recipe
Ingredients:
- 1 cup freshly brewed hot coffee
- 2 tsp brown sugar (or adjust to taste)
- 2-3 tbsp lightly whipped heavy cream
- ½ tsp vanilla extract (or caramel extract for a twist)
Instructions:
- Warm the Glass: Fill a heatproof glass with hot water to warm it. Let it sit for a minute, then discard the water.
- Combine Ingredients: Add the brown sugar to the glass, pour in the hot coffee, and stir until the sugar dissolves.
- Add Flavor: Stir in the vanilla or caramel extract.
- Top with Cream: Hold a spoon over the coffee and gently pour the whipped cream over the back of the spoon to create a layer.
- Serve: Do not stir! Sip the coffee through the cream for a rich and flavorful experience.

Ingredients:
For the pudding:
- 4 cups stale bread, cubed (Irish soda bread works great!)
- 2 cups whole milk
- ½ cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- ½ cup raisins (optional)
- 2 tbsp unsalted butter, melted
For the sauce:
- ½ cup granulated sugar
- ½ cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp vanilla extract (or caramel extract for a richer flavor)
Instructions:
Make the Pudding:
- Preheat Oven: Heat to 350°F (175°C). Grease a baking dish (9×9 inches).
- Soak the Bread: In a bowl, mix the milk, eggs, sugar, vanilla, and cinnamon. Add the bread cubes and let them soak for 10 minutes.
- Add Raisins and Bake: Fold in the raisins (if using) and pour the mixture into the prepared dish. Drizzle with melted butter. Bake for 40–45 minutes until golden brown and set.
Make the Sauce:
- Heat Ingredients: In a saucepan over medium heat, combine sugar, cream, and butter. Stir until the sugar dissolves and the butter melts.
- Add Flavoring: Remove from heat and stir in the vanilla or caramel extract. Return to low heat for 1–2 minutes, then remove.
Serve: Drizzle the warm sauce over the baked pudding and enjoy!
